Specials for week of September 20th

On my walk with the baby today we got through all the verses of 99 bottles of beer on the wall. Sorry.

OK start reading hear again. The leaves should be turning in about 2 weeks. Check out south west Waupaca county and North west Waushara county along highway 22 between Waupaca and Wild Rose on a sunny Sunday afternoon. I haven't seen any wooly bear caterpillars yet, how about you.

Does anyone have a photo of that nice wind swept scotch pine that was cut down last week on the north side of Madison Middle School. That was a really cool tree. I'd like a copy of any photos.

Broiled Redfish Parmesan
A delicious Fresh Seafood recipe!
Broiled Red Drum Parmesan

2 pounds redfish fillets
2 tablespoons lemon juice
1/2 cup grated Parmesan cheese
3 tablespoons mayonnaise
1/4 teaspoon salt
1/4 cup butter, room temperature
3 green onions, chopped
thinly sliced lemon and parsley for garnish, optional

Place fillets in a single layer on a greased baking dish or broiler
pan; brush with lemon juice.

Combine Parmesan cheese, mayonnaise, salt, butter, and green onions in
a small bowl; set aside.

Broil fillets 4 to 6 minutes, or until fish flakes easily
with a fork. Remove from oven; spread with cheese
mixture.

Broil about 30 seconds longer, or until cheese is lightly browned and bubbly.

Garnish with sliced lemon and parsley if desired.

Serves 6 to 8.

Fresh seafood for Friday will be Pacific Grouper, Perch, Haddock and Coho Salmon with a limited amount of Sockeye salmon.

If you missed Live Lobster Weekend last weekend I can order more live lobsters through Chicago. Let me know by Thursday if you want Lobster for Friday. Small ones are $13.00 per pound and large ones are $14.00 per pound. Live clams and Oysters are also available.
